With a background in structural protein biochemistry and a passion for sustainability, Joni is a technical co-founder at De Novo Foodlabs. The startup, originally founded in South Africa, and now based in the UK, leverages precision fermentation technology in working towards improving population-wide nutrition by creating access to nutritionally valuable and difficult to access compounds. With a key focus on the effects of protein function on nutrition, the startup is currently focusing R&D efforts on commercialising recombinant production of bovine lactoferrin.
